Ingredients
- 3 Med Size Brinjal / Eggplant (Baingan)
- 4-5 TBSP Cooking Oil
- 1 Med Size Chopped Onion (Peyaz)
- 2 TSP Ginger Garlic Paste (Adrak Lehsan)
- 1-1/2 TSP Red Chili Powder (Lal Mirch)
- 1/2 TSP Turmeric Powder (Halldi)
- 1 TSP Salt (Namak)
- 2 Chopped Tomatoes (Tamator)
- 4 Chopped Green Chili (Hari Mirch)
- 1 TSP Lemon Juice
- 1/2 Cup Coriander Leaves (Hara Dhania)
- 25 gm Butter (Makhan)
Recipe
- Rinse and dry Eggplant before roasting.
- Roast Eggplant / Brinjal on open flame for 8-10 minutes.
- Once roasted remove from the flame and peel of the skin.
- Mash eggplant nicely.
- Heat oil in a pan and add chopped onion and cook until golden brown.
- Add Ginger Garlic paste, red chili powder, turmeric powder, salt, chopped tomatoes and chopped green chili.
- Cook until tomatoes are softened.
- Add mashed Brinjal / Eggplant and mix nicely.
- Add lemon juice and coriander leaves and steam cook for five minutes.
- Baingan Bharta is ready to serve garnish with coriander and melted butter.
